Healthy Vegan Friday #96

Happy Friday! I am enjoying my week free of technology! So much so that I actually wrote this post up last weekend 😉 But my week is coming to an end and I need some good ideas when I menu plan for next week.

Let’s check out some recipes from last week.

Spicy Garden Carrot Hummus from Strength & Sunshine:

I’ve taken a hummus break over the past few months. It just hasn’t really been doing it for me. But maybe that’s because I haven’t branched out and tried something new. I’m totally digging the sound of Rebecca’s hummus. Fresh parsley & basil, paired with carrots would make this a unique fun snack with some fresh veggies. Yum!

Carrot Orange Chia Pudding from Vie de la Vegan:

Keeping with the carrot theme – check out this awesome sauce breakfast pudding. I tend to enjoy chocolate chia pudding, so I like this take on carrot cake. And the cinnamon adds a nice, natural sweetness.

Curried Butter Beans with Mushrooms & Kale from Allotment2Kitchen:

Doesn’t the title alone make your mouth water??? I managed to snag fresh butter beans once, but haven’t seen them since, but this recipe luckily features the dried variety. I haven’t thought about using dried. With mushrooms and kale – this dish definitely won my heart.

    1. I had an AMAZING tech break!! I will share a little secret with you… I was on vacation =D And it was glorious. No blogging or facebook or instagram for an entire week. It was GLORIOUS ;p

  3. Hmm technology break… Even when I go camping I check my data on my phone. I hope you r week went well! I hope you got some ideas for your meals. Sometimes my brain has no ideas left.

    1. I’ll be honest – I did still check my email a couple of times a day as I knew there would be a million emails waiting if I didn’t. But no blogging, facebook or instagram for a week and it was awesome! I always get great ideas for meals!!! Like your homemade cashew butter!   5. Hope you had a nice tech break! I had the opposite of a tech break, because I had a bake sale I had to advertise a lot on social medial. A bit of time off from it all sounds good!

    1. Lovely tech break – like always. I still checked my email a bit, but nothing else. I know how much technology fundraisers take, my goodness. I hope it went well!!! I’m assuming I will read about it when I catch up on blogging 😉
