Happy Friday! I am enjoying my week free of technology! So much so that I actually wrote this post up last weekend 😉 But my week is coming to an end and I need some good ideas when I menu plan for next week.

Spicy Garden Carrot Hummus from Strength & Sunshine:
I’ve taken a hummus break over the past few months. It just hasn’t really been doing it for me. But maybe that’s because I haven’t branched out and tried something new. I’m totally digging the sound of Rebecca’s hummus. Fresh parsley & basil, paired with carrots would make this a unique fun snack with some fresh veggies. Yum!
Carrot Orange Chia Pudding from Vie de la Vegan:
Keeping with the carrot theme – check out this awesome sauce breakfast pudding. I tend to enjoy chocolate chia pudding, so I like this take on carrot cake. And the cinnamon adds a nice, natural sweetness.
Curried Butter Beans with Mushrooms & Kale from Allotment2Kitchen:
Doesn’t the title alone make your mouth water??? I managed to snag fresh butter beans once, but haven’t seen them since, but this recipe luckily features the dried variety. I haven’t thought about using dried. With mushrooms and kale – this dish definitely won my heart.
