Healthy Vegan Friday #67

It is such a strange feeling not having to post every single day. I almost wondered if I still would for a few days just out of habit. It turns out I just don’t have that much free time on my hands haha ;p

Happy Happy Friday!

Are you to Healthy Vegan Fridays? Check out all of the info here.

Last week, there were more entries than ever before!! I’m very excited to see how HVF is growing and prospering. Keep up the good sharing!

Here’s last weeks favourites:

2 Layer Cacao Pistachio Raw Vegan Freezer Fudge from My Blissful Yoga Journey:

I love a good freezer fudge! This one is chocolatey and filled with cashews & pistachios giving it a nutty & salty flavour without any added salt. Sounds like a nice indulgence while still having a lighter treat =)

Chocolate Zucchini Pancakes with Blueberries from Strength & Sunshine:

Zucchini is being added to a lot of things these days (smoothies, desserts, etc). It lends a good texture without an overpowering flavour. I could never turn down chocolate pancakes, especially gluten-free ones with blueberries!

Middle Eastern Cauliflower and Hummus Tacos with a Tahini-Cumin Dressing from the Taste Space:

I paused at the thought of cauliflower on a taco… then had to do a double take when I saw a pickle! This is the most interesting taco I have ever heard of. I can’t wait to try it! Talk about fun fusion food =)

This week, I’m sharing my Tostizzas:

Link on up and bring some friends! Have a fantabulous weekend =)

  1. Thank you for the linkup Kimmy! I know what you mean, it is weird not to be posting every day (although I couldn’t quite keep up towards the end!). It’s so good to hear that your linky is growing – I’m looking forward to visiting the newcomers this week!

  2. I have kind of enjoyed a couple of days without blogging, even though I already have my next post half-written. It is just nice to relax!
That cauliflower taco sounds amazing, I would definitely eat that.
