Good morning! If you caught my last post – you’ll know that I’ve been away. But as my blog has had almost seamless posts for the past few weeks, you probably wouldn’t guess that I’ve been away for almost an entire month! I’m desperately trying to catch up on things – including blog reading. I am bee-hind! Give me a few days and I’ll get all caught up. Then I’ll just need to get out of vacation mode and back to cooking!

Ok, I don’t know about you – but my snacks have become boring. Apples, carrots & hummus, cucumber & guac. These are fine snacks and I like them, but it’s time to shake things up a bit. Lady Bugs on a Log are adorable and easy to make and include carbs, protein & veg! The post is full of tons of fun snack ideas from chunky monkey cookie dough bites to homemade rollups and even has popcorn trail mix. So fun =)
Crustless Chocolate Cheesecake from Hungry for Balance:
This looks naughty. But it’s not! It’s a raw dessert and it has zucchini in it! I’m so excited to try it =) I’ve tried making veggie cakes/cupcakes before with no luck… my baking skills are lacking. My raw desserts on the other hand, always turn out and the thought of getting veggies in with a treat, makes me happy.

OMG!! Doesn’t this look scrumptious? This would be the perfect thing to make for a nice Sunday brunch. I love how it uses leftover roasted veggies and is topped with fake bacon.
