Healthy Vegan Friday #55

Good morning! The sun is shining and it is going to be a bee-u-ti-ful day! I am finding Healthy Vegan Fridays is slowly, but surely, rising in popularity. I want to thank you for contributing your awesome recipes – YOU are what keeps HVF alive! So, let’s get at it, shall we?

Are you new to HVF? Come check out everything you need to know right here.

Let’s check out your favs from last week.

Funfetti Celebration Doughnuts from Strength & Sunshine:

Who makes vegan, gluten-free baking fun? Rebecca does! She is the queen bee when it comes to cranking out healthy, allergy-friendly, not to mention delicious recipes! These doughnuts sound especially intriguing with plantains as a base. I need to get me some funfetti =)

Chocolate Zucchini Avocado Fudge from Hungry for Balance:

chocolatezucchiniavocadofudgeI love sneaking green things into desserts!! Especially green things that add to creamy dreamy textures =) Packed with some healthy fats and sweetened with dates, these are a guilt-free treat.

Beet Kvas from Gluten Free A – Z:

beet bowlWhat a gorgeous bowl of beets. And who knew they could be made into something that can purify blood and cleanse the liver? What awesome gems! I have never thought to ferment beets, the idea is a little overwhelming, but Judy gives fantastic step-by-step instructions. She makes it sound easy-peasy =)

This week, I’m sharing something a little more decadent – my Chocolate Coconut Cake.

I hope you have a wonderful weekend! Link up – don’t forget to link back. And share the love with your blogging buddies =)

Can’t get enough HVF? You can keep the party going with Facebook & Pinterest.

  1. Hi Kimmy, thanks for the link up! I have noticed Fridays are getting busier around here, you’ve got a great community building here :) this week I’ve shared a cinnamon-cashew icing to pair with the healthy blender muffins I shared a few weeks back.

    1. I’m so excited about the slow but steady growth in popularity! Yay! It helps having regular contributors with awesome recipes like yourself =D Oooh I haven’t had a chance to try the muffins yet, I’m glad I have held off ;p

  2. Hi Kimmy,
I adore your Chocolate Coconut Cake. That yummy combination makes my mouth water! As always, thanks for hosting Healthy Vegan Fridays. It’s so much fun exploring new recipes to try! Today I shared two informational posts instead of recipes! All the best, Deborah
