Pan-Fried Coated Tofu Strips from Chitra’s Healthy Kitchen:

tofu-fry5I am a lucky woman as my husband will eat and quite enjoy tofu even if I make it plain & boring. BUT! What better way to reignite the love affair with tofu than with this stellar pan-fried version? Yes please!

Peanut Butter Breakfast Chow from Nachos for Breakfast:

I never get sick of oat breakfasts. It’s like the comfy sweater you never want to get rid of. I rarely bake it though and this version with the added pb deliciousness sounds like the perfect thing to make when I have family visiting this week =)

Cajun Stuffed Bell Peppers from Strength & Sunshine:

I feel like I totally forgot stuffed peppers existed until Ms. Rebecca posted this. What a great way to enjoy bell peppers with a fun kick. And this warm, comfort dinner comes together pretty quickly. Yum!
