Healthy Vegan Friday #133

Happy FriYAY! First Friday of the New Year. Exciting stuff. Does anyone have any New Year Resolutions? I’m not big into resolutions, I prefer setting attainable goals that I work on in a day, week, month & year. They change and grow over the course of the year. In lieu of the kind of resolutions I used to make like cut out all junk food and over exercise, I think I’ll focus more on things like this. Heavy Black Heart on Google

Check out this fun treat that Kate made. Inspired by Outlander and her time spent in the UK, she veganized this fun oat dish with coconut whipped cream. This could make a good breakfast (maybe dry haha) or an excellent dessert!

Raspberry & Coconut Tarts from The Baking Explorer:


We’re on a roll with raspberries and coconut whipped cream! It’s a delightful combo and would be intensely delicious in tart form. This would be a great dessert option on a night when you are trying to impress guests. Welcome Kat – looking forward to seeing more of your recipes shared on Healthy Vegan Fridays =)

Miso Soup with Leeks and Carrots from A Hedgehog in the Kitchen:


I’m tending to crave more soups with the rainy weather we’re getting in Northern California. And this soup with it’s wonderful probiotic properties would be especially good while trying to recuperate from “treat belly” from the holidays 😉

Healthy Date Squares from Sandi’s Allergy Free Recipes:


I am such a sucker for dates. When I lived in Ontario, Canada, I would save my pennies up to be able to afford a small package of dates to make treats like this. Now that I’m living in California, dates are a plenty! I can’t wait to try making this gluten-free, refined sugar free treat.

How gorgeous is this bowl? So hearty and warming filled abundantly with grains, greens & protein. It has all of my favourite foods combined in one delightful bowl. Yum!

I’m sharing my Mushroom Bourgignon:


I got a new light for Christmas from my mom. I can finally take pictures at night! I’m still trying to figure it out, so the pictures are still coming along 😉

    And thank you for featuring my Scottish treat! I do indeed recommend going dry if you want to have some for breakfast… lol

    I love your 2017 note… Unfollowing negative people on social media is pretty high on my list. I want and need positivity this year after the emotional year that was 2016. And you know what? I’ll go with the flow and try to enjoy every moment. :)
