Happy Friday my dears! We made it through the week. I’m looking forward to hosting a holiday treat exchange tomorrow (which I will share with you Monday), a holiday party (a girl likes to get dolled up once in awhile) and relaxing (aka catching up on blogging!). What fun plans do you have?

Pumpkin Mushroom Bowl from A Hedgehog in the Kitchen:
I’m a sucker for anything that is served out of an edible bowl. And how pretty is this dish? The rice takes a little more time and effort, but sounds well worth it. And well, anything with mushrooms!
Japanese Roasted Ratatouille Spaghetti from Sprinkle of Vanilla Sugar:
Who knew spaghetti could be so gorgeous? I love this Japanese inspired ratatouille with eggplant and squash. Talk about a comforting dish, and seasonal produce to boot.
Pear Parsnip Pie from Healthy Helper Blog:
I’ll admit to being an apple fanatic, but Kaila gives us a friendly reminder that this can be a good time to use our under-used, under-rated friend, the pear. And parsnip in a pie? I like the idea of sneaking veggies into pie… especially during the season of overindulgence.
Cranberry Sauce Quick Bread from Strength & Sunshine:
This gluten-free, cranberry studded bread has few ingredients and can come together quickly. Sounds like a great dessert for the holidays, and a super creative way of using up that homemade cranberry sauce.
Mary Ellen is sharing her Black Forest Baked Oatmeal:
Dessert for breakfast? Yes please! This could make a yummy treat for breakfast or a dessert for later in the day. Either way, it’s a win. Topped with homemade coconut whipped cream, you bet I’ll be making this sometime soon (probably tomorrow!).
I’m sharing my Chocolate Peppermint Bark:
This can be made in about 15 minutes (plus extra time for freezing) and makes a fantastic DIY holiday gift. And it’s chocolate and peppermint! Best combo ever (aside from my beloved pb and chocolate obviously).
