Terry and I had a couple over for dinner last night and my one fear whenever I have new people over, is to make food that is tasty and healthy. I find it very easy when I cook for just the two of us, but I always like having a bit of a wow factor when entertaining.
I actually only ended up taking a picture of dessert, which is disappointing since the salad and main course turned out amazeballs! Ah well, I’ll just have to recreate the magic and post about it.
I came across this recipe while on a cleanse last winter and it has delighted vegans and meatatarians alike. It is not only super delicious, but fairly healthy too, with some great fats =)
I fell in love with it instantly and always get great compliments when making it for others. I make this all year round, but it’s pretty fun for the holidays right now.

The site has lots of great-tasting and healthful recipes. For this specific recipe, I use whatever combination of nuts I have on hand, and I actually add a couple of tablespoons of water to the crust mixture when processing to help hold it together a bit. And I use maple syrup instead of honey as I really enjoy the flavour it lends to the lime.
