Healing Pineapple Stirfry

I made my way from California to Canada as my mom had knee replacement surgery. She is actually recovering much better than expected, but she still experienced quite a bit of pain. She didn’t have much of appetite from the pain medication they had her on, so I wanted to think of something light and flavourful for her to eat, as well as help with her pain.


Pineapple stirfry to the rescue! Mom is actually a bit of a picky eater, but I know she loves pineapple. It was easy to create a meal around that. I cooked up some brown rice and lightly sautéed some veggies with the pineapple and made a light sauce. I snuck in some fresh ginger to help with her inflammation.


Healing Pineapple Stirfry

1 tbsp of coconut oil
1 clove of garlic, minced
1 tsp of fresh ginger, minced
2 medium carrots, thinly sliced
1 small head of broccoli florets, cut into bite-sized pieces
1 red pepper, roughly chopped
a large handful of snap peas, trimmed & cut in half
1  cup of pineapple, roughly chopped
2 tsp of soy sauce
1 tsp of maple syrup

Heat a large wok on the stove on medium heat. Add the coconut oil, garlic, ginger & carrot and sautée for 5 minutes. Add the broccoli & snap peas and sautée another couple of minutes. Then add your pepper and sautée another minute. Finally add your pineapple with the soy sauce and maple syrup and just stirfry until heated through. Serve on brown rice or your favourite grain.

  2. I love pineapple in stir fries… and on pizza… and in burgers…. basically I am a pineapple goes on savoury things kind of girl. This sounds lovely and light, very thoughtful of you for you mum!

    1. Awwww I’m not sure she was always happy about me being around, I took her care pretty seriously haha 😉 Made her eat way more fruits and veggies than she is used to, but all in the name of health! Thank you so much Randi!
