Canada Day and America Day are just around the corner =) I know… it’s not called America Day, I was politely told that when I first moved here. I just think it sounds cute, like my Canadian Holiday. Although I live in the good ole US of A, my heart will always belong to Canada.
Whichever country you are in (or if you’re in neither), here is a quick & easy treat to make and enjoy on your country’s special day.
You could always make both and celebrate both days =) Growing up next door to Michigan, we always celebrated both. We hung both flags outside of our house year round, as a lot of Michiganer’s do. And we are only separated by a small river, so we had firework shows across the river on July 1st for Canada and then again on July 4th for America.
Celebration Parfaits (serves 2)
1 can of full fat coconut milk (be sure this has been in your fridge at least 8 hours to set – I stash one in my fridge at all times just in case)
fresh strawberries & blueberries
Wash the fruit and slice up the strawberries. Open your chilled can of coconut milk and carefully scoop the hardened cream off the top of the can, ensuring you leave the liquid in the bottom. Place the cream in a bowl and whip it with an electric mixer or a whisk. Layer the cream in a glass first, then fruit and alternate between cream & fruit. Voilà!
