Green Apple Smoothie

Getting over the food coma? This may help ;p

I recently went to the kitchen to make my beloved Raspberry Pear Smoothie. I had managed to snag fresh mint at the market, I distinctly remember grabbing a pear as well and had frozen raspberries in the freezer. I got my mint out of the fridge, could find no pear (Terry must have eaten it on me!) and was rather inconveniently out of frozen raspberries. I was quite annoyed as I had my heart set on it. But I think what I ended up with is even better.

Instead of the pear, I threw in a tart granny smith apple. I had no kale either. Geez! Spinach went in. And without raspberries, I rescued some forgotten frozen strawberries from the back of the freezer. Substitute smoothie for the win!

I added in some lime juice for a bit of a zing. It really works well with the green apple.

Green Apple Smoothie
1 green apple, cored & roughly chopped
1 heaping handful of spinach
1 small handful of fresh mint (a drop of mint extract works)
1 cup of frozen strawberries
the juice of half of a lime
1 tbsp of chia seeds
3/4 cup of hemp milk (or whatever dairy free milk you have on hand)
1/4 cup of coconut water

Throw it together in a blender, blend & enjoy.

Not only is this smoothie super delicious – it’s GREEN. Holiday Smoothie!!!

  1. Hi Kimmy! How are you doing? I hope you are recovering well! I just came across this older recipe of yours that looks so good! I am always on the lookout for new smoothie recipes and I love the idea of adding spinach to a smoothie recipe. I have actually never tried that! I hope all is well with you! Sending you a BIG hug from Paris!

    1. Hello my dear! I’m looking at this post and realizing how far I’ve come with blogging haha 😉 I LOVE adding spinach to smoothies. It’s a great way to sneak veggies in, gives a good colour and even adds a bit of sweetness.
I hope you are having a wonderful weekend in the city of love!
