French Toast for Dad

Well, this past weekend would have been my dad’s 63rd Birthday!!  I miss him so very much and found a nice way to celebrate his special day. Birthdays are a big deal in my family. My 4-year old niece even made my dad a card saying “Sorry you missed your birthday ’cause you’re in Heaven” ahahaha ;p She’s too cute.

When I was growing up, every single year on my birthday, without fail, my dad would always make me french toast. I’m not talking your restaurant variety “pretty good” stuff. I’m talking the holy grail of French Toast. Super awesome, amazing, hard to describe French Toast. He would somehow make it so you didn’t even need to put maple syrup on it. He made a special batter, dredged the bread in it and fried it up on the griddle. It came off piping hot, perfectly cooked and melted in your mouth. I tried to recreate this as his recipe died with him. Sadly… I did no such thing. I made “tolerable” french toast. It was just ok. Super disappointing! I debated whether I should put the recipe up at all, but decided to go ahead with a disclaimer. Maybe you guys can use some of my ideas as a base and tweak it to make it better.

Anyway – back to me on my birthday. Dad would get up super early to make me French Toast. He’d wake me up before heading out to play a round of golf. As a child and teenager, I never understood how dad could possible want to play golf on my birthday. I mean, it’s my special day after all!! But as an adult with interests of her own, I now understand the importance of practicing your passion. I tried making golf my passion… I think the problem is, you should never have to try to make something your passion. It just will be if it’s meant to be. I went for a run instead. And I haven’t ran 10km in a few months actually and I’ve been slow and I honestly wasn’t expecting much. I was kind of hoping to run 10km in under 1hr 5 min, but didn’t think I’d be able to and thought I could settle happily under 1hr 15 min and check this out:

10km in an hour!! I haven’t done that in over a year! I used to be able to do this no problem after I had been running for a couple of years and kept it up until about a year ago or so. Very happy to have done this =) Ok, on to the French Toast!

Dad’s secret was stale bread. I found some super tasty vegan & gluten free bread from my Farmer’s Market from a local bakery called “Imagine It  Bakery“. They are super awesome and have a ton of delicious vegan & gf treats – if you are in the NorCal area, I highly recommend you check them out! My secret to French Toast – Culinary Coconut Milk.

I found this stuff at Whole Foods recently and LOVE cooking with it. It’s nice & thick and creamy & delicious. Other than that… you probably shouldn’t listen to my secrets as they didn’t turn out well ;p Maybe you guys could give me tips on how to make it better =)

French Toast 

12 slices of stale bread

1 cup of cashews, soaked overnight

1 “juice” box of coconut milk

1 tsp of cinnamon

1/4 tsp nutmeg

2 tbsp maple syrup

1 flax egg (1 tbsp of ground flax + 3  tbsp of warm water)

Heat a wok on the stove on medium heat. Add 1-2 tbsp of coconut oil just before adding your bread.

Blend all ingredients from cashews to maple syrup, I added a bit of water to thin it out. Place the mixture in a large mixing bowl and add your flax egg. Take your slices of bread and “dredge” it through the mixture. Make sure it is nice & coated. Place your coated bread slices on the heated wok and cook about 2 minutes per side. Serve with fresh fruit.

Well, this was not how I expected the toast to turn out, but somehow I think my dad would appreciate the thought & effort <3
