I mentioned in my last post that when you’re away from home, it can take some careful planning to be sure you will have lots of healthy food available to you. Packing snacks is pretty easy, I have mastered that trick. And over the years, I have become the queen at packing salads and meals for on-the-go. We do enjoy eating out, but we don’t like to count on Kimmy-friendly food always being around and it’s cheaper to bring your own =)
This past weekend I knew I would be tempted to overindulge, so I thought I would counter-act some not so ideal eating with a healthy and detoxifying salad.
This salad was so good! And very healthy and quite filling. I unfortunately did indulge more than I would have liked to this weekend, but this salad definitely helped me stay a little better on track at least.

Detox Salad (makes 4 large servings)
1/2 of a head of cauliflower, cut into florets
3 stalks of broccoli, cut into florets
4 medium carrots, peeled and ends trimmed
1/4 cup of raisins
1/4 cup of gogi berries, soaked, drained & rinsed
2 tbsp sunflower seeds (I had wanted to use pumpkin seeds but was out)
the juice of half of a lemon & 1 tsp of zest
1 tbsp of maple syrup
2 tbsp of flax oil
Take the cauliflower, broccoli & carrots & grate them in a food processor. Put it in a big mixing bowl and add the remaining salad ingredients and mix to combine. Mix the dressing ingredients in a small bowl and mix it in with the salad.
This actually tastes better if you leave it a day or two to sit and let the flavours meld.
On a side note, I actually very lightly steamed the broccoli & cauliflower as I tend not to eat raw vegetables that are part of the brassica family.
I actually enjoyed the salad just the way it is, but to dress it up a bit, we added a little more fresh squeezed lemon juice right before eating it, added some sprouts and a bit of avocado that needed to be used up.
