Creamy Dreamy Cheezy Cauliflower Soup

I don’t use cauliflower much. After some digging around, I found that people with thyroid issues (hypothyroidism) should try to steer clear of foods from the brassica family (kale, cabbage, broccoli, cauliflower, brussels sprouts, etc), especially raw. And they are a little tough to digest. But, they do work nicely in some things (curries!!!) and can add a lovely texture. And with the colder weather, I’ve been craving more comfort food, like soups.

Very warming and comforting. Great for making on a lazy Sunday afternoon, or can be quickly thrown together after a busy, hectic day. It’s basically 5 ingredients and can come together in 20 minutes or less.

Creamy Dreamy Cheezy Cauliflower Soup (serves 4-6)

1 medium head of cauliflower, chopped into bite-sized pieces, steamed
1/2 cup of cashews (soaked 4+ hours)
1 cup of navy beans
1/3 cup nutritional yeast
2 cups of of vegetable broth
a sprinkle of sea salt & pepper

Throw your steamed cauliflower and remaining ingredients into a high speed blender. I had to do this in 2 batches as my blender wasn’t big enough, I just did half & half. Blend and then warm on the stove.

  1. I love cauliflower soup – I never used to like cauliflower but once I had kids, I decided I should keep an open mind about vegetables so I could encourage them to eat vegetables too. And now my son’s favourite vegetable is cauliflower, hahaha 😀 will have to give this soup a try, can’t believe it’s just 5 ingredients!

    1. I don’t think my parents ever even had cauliflower while I was growing up. You sound like a great parent =)
      I really like quick, easy recipes with just a few ingredients. Especially during the week when things get busy and hectic.
