Cocochew Smoothie – Showing my Smoothietude!

I was so very excited to hear of a smoothie contest by Kathy over at lunchboxbunch. It’s one of my fav blogs. She always has awesome recipes and her pictures are absolutely gorgeous. And my all time favourite smoothie creation is one of hers (Spirulina Shake). The contest sounds fun on it’s own – making a smoothie recipe, taking some fun pics and sharing it. But there is a super fantastic grand prize!!! A vitamix! I’ve had my eye on one of these beauties for several years, I’ve really been wanting one.

So I thought it would be fun to enter the contest and I quite like the way my smoothie came out!

It’s not a green smoothie. I love my green smoothies, but I wanted to come up with something a little different. Enter coconuts! They are a lot easier to come across now that I live in Northern California so I thought I would take advantage of it =)

Cocochew Smoothie 

1 coconut (pour out the juice & spoon out as much of the meat as possible)

1/4 cup of cashews (soaked for an hour)

2 tbsp of cashew butter

2 tbsp of shredded coconut

1 banana (frozen if you want it thicker)

2 dates

the juice of half of a lime and some of the zest (1/2 tsp)

1 tsp of lacuma powder

1 vanilla bean (scrape the inside of the bean)

**Side note – I recommend pouring the coconut water into a bowl before pouring it into the blender on the off chance that you knock your blender over while trying to scoop in coconut meat… *sigh*

Mmmm coconut-y deliciousness.


It was pretty fun getting the smoothie ready, using an actual coconut instead of just buying pre-packaged coconut milk proved to be a bit of work, but it’s totally worth it!

It was such a beautiful day today, that I thought I’d pack up my smoothie and enjoy it by the beach!

I kind of made it a Hawaiian theme. My hubby and I were supposed to take a trip there last year for our honeymoon (we’ve been postponing it for a few years now haha), but we moved to California instead. So I thought I’d bring a little Hawaii to me =)

      Haha – yes, the side note. That would be my first attempt at making the smoothie haha ;p Maybe I should have taken pictures of that too!
      Ooh you would love lacuma powder! It’s raw and a great addition to things as an alternative sweetener. I like adding it to things that I’m trying to give an almost caramel flavour too. YUM

      1. So my husband is mad at me, and I’ll blame it on you. 😉 I was just hacking open a coconut to make this smoothie for breakfast. He came out all bleary-eyed saying, “Is everything ok? What the heck is that banging sound?” He wasn’t happy when I told him I was just making a smoothie!

        This recipe came just in the nick of time. I’m trying to use everything in my fridge before our move this weekend. And yes, a coconut was in the back of the fridge! I have no idea how long it’s been there, but I immediately thought of this recipe when I saw it today! I guess I should’ve waited until the guy was up though… Ooops!!
