Good morning my lovelies! I hope you are all having a great week.
Today is the last day of my cleanse so I thought I would share a recipe I made earlier in the week before I go back to sharing recipes that are a little more fun ;p
Cleansing Beet Salad for 2
1 large carrot, peeled & shredded (I just used my peeler)
1 large beet, peeled & shredded (I sliced it thinly using my mandoline and then cut it into matchsticks)
1 small fennel bulb, thinly sliced (I used some of the leaves as garnish)
4 cups of mixed greens
1 large handful of arugula
squeeze the juice of half of a lemon on top, use a bit of salt & pepper to taste & sprinkle on some pumpkin seeds
Mix it all together. I topped mine with sprouts. I didn’t add any oil, but feel free to add some – flax oil would be a nice addition. Chopped avocado would be tasty too.
I love how easy this salad is to make. It came together quite quickly. I just peeked in the fridge, started taking things out and before I knew it, my salad was ready. This also transports nicely as I had half of the salad one day and the other half the next day while on the go (it was actually better the second day).
In other news, I have an exciting post coming up next week (I think maybe Monday?). I am doing a review of a product I am in LOVE with and they sent me some of it to review. Since I’ve already tried most of it several times, I thought it would be nice to share some with you so I’ve decided a couple of my lucky readers will be sent some of said product. One more quick thing, I’ll be posting tomorrow. I don’t normally post Saturdays, but felt like this needed to be done. It won’t be a recipe or anything fun, I post a lot thinking of my readers and what they would like to see. This post will be for me.
