Ok – you caught me. I didn’t actually make a sandwich out of this. Between the whole gluten-free thing and not having a whole lot of bread in the house, I make a lot of salads. But I urge you to try making a nice, crusty-bread sammy out of this.
Inspired from Hello Veggy’s Curried Chickpea Mango Salad
Chickpea Salad (or Sammich) makes 3 good-sized salads or 4 small salads
1.5 cups of chickpeas
3 tbsp of vegan mayonnaise (I used Just Mayo)
1 tbsp nutritional yeast
1 tsp cumin
1/2 tsp paprika
1/4 tsp of black salt (use white if you don’t have black but the black will give it that “egg-y” flavour)
2 stalks of celery, diced
1/2 a bell pepper (I used a quarter of yellow and a quarter of a red), diced
1/4 cup of peas
Place the chickpeas in a medium-sized bowl, add the remaining dressing ingredients (mayo through salt) and mash it up with a potato masher.
Add in the celery, pepper & peas and stir until combined.
Enjoy with some crispy bread, or like me, some crispy greens =)
