My friend Robin and I were so grateful for all of the help we received recently with the bake sale we hosted. We figured there is no better way to say thank you than with food! We invited all of the girls over for supper and Robin decided on a “cute food” theme. I of course will share one of these stellar recipes with you too!
But first, let’s take a look at how cute everything turned out!
Devilled Potatoes. Aren’t these the cutest freakin’ things ever??? I am *so* excited to share this recipe with you. And I will! But not today.
Today I will be sharing the recipe for the Raw Avopacho Soup I made:

A couple of things we learned about throwing our 5-course dinner:
- Two hours is not enough time to create adorable food!
- Plan ahead (we had done some *serious* planning, but I think maybe next time we will get together and prep some food the day before)
- Think of an easier theme haha ;p
And now for the recipe!
Raw Avopacho Soup (serves 6-8 people)
6 large avocados (washed, cut in half and most of the flesh removed – leave a bit for aesthetics)
2 tomatoes, chopped (I tracked down an heirloom at my grocery store and it really makes a huge difference!)
1/2 a green pepper, chopped
1/4 cup of fresh basil (or 1 tsp of dried)
1/4 cup of fresh cilantro (or 1 tsp of dried coriander)
1/4 of a small onion, chopped
2 large cloves of garlic, chopped
the juice of a lime
1/2 tsp of paprika
1/4 tsp of cayenne
a sprinkle of salt & pepper
-Take all of the ingredients, throw them in the blender & purée until smooth. I also added some fresh chopped basil on top as a pretty garnish. This dish is best if you allow the flavours to meld a bit for an hour or two before enjoying. I do not find it keeps in the fridge well for more than a few hours, so eat it allllll up =)
