Halfway through MoFo! *phew* I’ll be honest, I’m enjoying it, but I’m feeling the energy diminishing ever so slightly. So today is a simple salad =) This would make an excellent side, or even a good breakfast!
16th: Complimentary colours – For instance, Red & Green, Purple & Yellow, Blue & Orange
You may have guessed I picked orange & blue. I figure there will be enough red & green next month and I wasn’t sure I could be creative with yellow & purple. And oranges are coming in season here!
Orange Blueberry Salad (serves 1)
1 generous hand full of spinach, de-stemmed
1/2 an orange, peeled & chopped
1 handful of blueberries
1 tsp of olive oil + 1 tsp of balsamic vinegar
salt & pepper to taste
Lay the spinach on a plate. Add the chopped orange slices and blueberries. Drizzle on the olive oil & balsamic vinegar. Finally, add a sprinkle of salt & pepper. Voilà!
