It’s CHRISTMAS!!!! Ok… so I don’t get into the whole fall thing. And most of you know I don’t like pumpkin (through absolutely no fault of my own!). Although I’m not religious, I can’t help but fall easily into the traps the holidays set. Hot chocolate? Yes please. Cute/ugly sweaters? You bet! Lights & decorations? Bring it. Holiday movie marathon? Already started my friend.
And all things peppermint. Yesssssss. Here is my apology in advance for ALL of the peppermint you are about to get for the next few weeks. I mean, candy canes are only around for such a short period of time, we need to use them up people!
Chocolate Peppermint Bark (makes a bunch)
12 oz of chocolate chips (or a bag and a half of Enjoy Life dark chocolate regular sized morsels)
1 tsp of peppermint extract
8 candy canes (I use TruJoy organic ones as they are made without all of the scary ingredients of regular ones)
Place all of the chocolate chips in a sauce pan on low heat and melt them. While the chocolate melts, throw the unwrapped candy canes in a large ziploc bag and smash them up! Add the peppermint extract to the melted chocolate mixture and stir well to combine. Take most of the smashed candy canes (be sure to reserve a few tbsp) and stir it into the chocolate peppermint mixture. Line a cookie sheet with parchment paper, pour the chocolate mixture out and spread it out with a spatula. Sprinkle the reserved smashed candy cane on top, pressing it in gently. Freeze at least 30 minutes before trying any (but you can lick the spoon & spatula like I did!), then break it up into bite sized pieces. Keep in the freezer.
I’m hosting a treat exchange this coming weekend, so I’m going to be exchanging these and making up cute, little boxes with all of the treats to give out as gifts. It’s a great DIY gift idea – especially if you host or attend an exchange as there will be a good variety of treats to give.
Or you could just eat it alllll yourself.
