California Quinoa Rolls

I’m loving today’s MoFo theme. Especially since I live in California =D =D =D

17 Make (or eat!) a traditional local dish.

I knew I wanted to make something with avocado. And I love sushi. I don’t make it though because it’s time consuming and I kind of suck at it. I don’t even have a sushi mat…. or sushi rice. Ah well. All I could think of is that I was lucky to not still be in Canada where I would have probably failed horribly at an attempt at Poutine ;p

And making the sushi was fun, even if I didn’t quite make it exactly traditional. The tomato is totally optional, I just thought it gave it a little more of a “fish” look.

California Quinoa Rolls (serves 1 hungry person ;p)
1/2 cup of cooked quinoa
3 sheets of nori
1 avocado
1 small cucumber (I used a large persian)
1/4 of a tomato

Lay out your nori sheet on a cutting board. Smooth out some of the cooked quinoa on top. An inch above the edge of nori closest to you, layer on the avocado, cucumber and top it with a slice of tomato. I served mine with a bit of coconut aminos. Mmmm. Since I didn’t use proper sushi rice or use a mat and my only form of plastic wrap was press n’ seal, they were messy.

  1. Yum!! This is so great! I have been to California a few times and I love all their fresh ingredients. Living in Canada isn’t pretty great and I didn’t even make a poutine (but I did make some loaded cheesy fries!) Happy Eats!

    1. The fresh ingredients are pretty awesome. I do miss a few things about Canada – the apples are better. So much better!
      I’m totally eyeing up your loaded cheesy fries for the coming weekend menu plan =)

  2. Avocado sushi is mu favourite sushi. I’ve only made sushi a couple of times at home, though never with quinoa. There’s a sushi place at a shopping centre here that makes avocado rolls with brown rice, which I like.

    1. It’s my favourite sushi too! I actually am disappointed when I find sushi without it haha ;p
      I haven’t found any places nearby that have good vegan sushi, I’m not sure I have tried very hard though. I should look.

  3. I think your sushi looks great! I love the idea of using quinoa. I took a sushi making class in NYC in February and have yet to do something with my “skills” – I probably forgot how to do it all together. I should try soon – you’ve inspired me. :)
