Buckwheat Breaky

I love a good green smoothie for breakfast. It is the thing I eat most often in the morning. But sometimes I need to change it up. Especially days that I have boot camp or a long-distance run. I like to have something a wee bit more substantial (I’m not hating on my green smoothie – it is super filling most days!). And some mornings, a gal just likes her carbs.

Enter buckwheat. I LOVE buckwheat. Especially raw. After you soak it, it makes this weird, kind of mushy, sticky texture. And it is glorious. 

Buckwheat Breaky (serves 2)

1/2 cup buckwheat groats (soaked in water in a bowl on the counter for 8 hours, drained & rinsed)

3/4 cup hemp milk

2 tbsp chia seeds

2 tbsp cacao powder

2 tbsp maca powder (or protein powder)

2 tsp cinnamon

1-2 figs (I used 2)

Put all of the ingredients in your food processor & whiz to combine. I soak the buckwheat groats in the morning & then make this the night before & let it sit in the fridge overnight. You can always just soak your groats overnight and make it in the morning and eat it right away, but I find it gets a thicker consistency if you let it sit overnight. Top with fresh fruit & enjoy.

Mmmm buckwheat.

  1. Hi Kimmy, I just printed out your recipe–can’t wait to try this. Because, apparently, it’s something else we have in common–I love, love, love buckwheat! It always reminds me of the buckwheat pancakes I had as a kid. But I’ve never had it soaked/raw. Off to buy some BW groats this weekend and give it a shot!

    1. Oh awesome Lee! I think you’ll really like it! I’m in love with raw buckwheat. Ever since I tried making raw buckwheat porridge for the first time, I haven’t made it cooked since ;p

      1. OK, I think I goofed on soaking, because my buckwheat groats didn’t get sticky. Do you soak them in water? On the counter or in the fridge? How long?
