I have been in a smoothie funk! I got tired of being creative with my smoothies and resorted to make the same basic smoothie (mixing up the type of green as a base and mixing up the frozen fruit a bit) on my smoothie breakfast days. I have also just been in a bit of a mood funk lately. Not sure what it is, I feel like my hormones are out of whack and sadly, my doctors, specialists and even my naturopath have been unable to regulate my hormone replacement therapy since I moved here a year ago. So I woke up one morning last week determined to break that funk!
This did the trick on both accounts!
This little smoothie may not look like much, but it is packed full of pure awesome!!! After drinking this, I felt energized and got through a 30 minute leg workout, an hour walk and 12 miles of biking before I needed lunch (a small detox salad at that!).
Tropical Funky Monkey Smoothie
1 large handful of greens (I used red leaf lettuce)
1 yogurt cup (I use So Delicious plain coconut milk yogurt)
1/4 cup of frozen strawberries
1/4 cup of frozen pineapple
1 tsp of maca powder (energy in powder form!!)
1 tsp of lacuma powder (optional)
1 tbsp of almond butter
1 tbsp of unsweetened, shredded coconut
1/2 tsp of cinnamon
1/2 cup of almond milk
1/4 cup of coconut milk
1/4 cup of coconut water
1/2 of a vanilla bean, scraping the inside of the pod (or just use 1/2 tsp of vanilla extract)
Put it all in your blender & blend it up.
It was SO good. It is a rather large smoothie though! The banana I had was actually pretty big, I think I could have halved it, but this really kept me going all day. I had a small lunch, a bit of fruit as an afternoon snack and loaded up on veggies for dinner. Good stuff =)
The lacuma powder is optional as I realise not everyone has this. If you are at all interested in it, pick some up next time you are at your local health food store. For any of you Southwestern Ontario peeps, Healthy Haven in Kitchener Ontario carries some in their bulk spice section. Now that I live in Northern Cali, I find it at my local Whole Foods in the section with all the raw stuff. It is full of antioxidants and carotene – a real super food that can be used as a sweetener substitute without spiking blood sugar and I find it lends a caramel-y flavour. It’s quite tasty.
