These may not look like the prettiest dessert, but don’t let their less than stellar appearance scare you away!
Mmmm chocolatey goodness. I crave chocolate on a fairly regular basis… lately I’ve been better at fighting it off. But I can’t help it, sometimes I just can’t ignore that chocolate siren. Instead of buying processed and refined pre-made chocolates from the store, I like making my own.
I especially love the combination of chocolate and mint. Add coconut and I’m in love =) I recently was talking to a raw chef and tried one of his macaroons and it was delicious. One of the best I had ever had (and I’ve had my fair share of macaroons!). He told me the secret ingredient is coconut butter. I had been meaning to buy coconut butter for quite some time and this cinched it for me. I had been making my macaroons ever since with that ingredient.
I thought it was a good addition, but in general, I’m not a fan of coconut butter. When I ran out, I didn’t bother to buy more. As I still craved the texture it gave, I thought I would try adding a secret ingredient of my own – cashew butter! It really helped make a terrific texture and an amazing taste!
6 ingredient Rawcaroons
1/2 cup raw cacao
1 cup of shredded, unsweetened coconut
2-4 tbsp of maple syrup (or agave) depending on your sweetness preference (feel free to use raw agave to keep it completely raw)
2 tbsp coconut oil
2 heaping tbsp of raw cashew butter
a few drops of peppermint extract
Put all of the ingredients into a food processor and process until a sticky mixture forms (no need to process for long!). I also added a few tablespoons of water to the mixture as I used less sweetener. Grab a teaspoon and portion them out into little balls on a plate and put them in the fridge or freezer until they harden.
