Before going veg, I never liked the pineapple & ham combo. I didn’t like ham and I actually wasn’t a fan of pineapple either. So obviously I didn’t like the two together. bad + bad does not = good. Terry and I recently ordered pizza though and he tried a veggie pineapple & ham and it was good! Man oh man. I couldn’t quite get it out of my head. I like recreating things at home, but this took a completely different spin.
Guess what the secret ingredient is????? Guess!!! I mentioned it recently.
Did you guess yet? It’s liquid smoke. It really adds that thick, smoky flavour.
Pineapple & “Ham” Stirfry
8oz of tempeh, chopped into bite-size pieces (like little ham pieces)
4 tbsp of coconut aminos (or soy sauce)
1-2 tbsp of maple syrup (I used 2 but would try 1 next time)
several drop of liquid smoke
Put the tempeh in shallow dish. Combine the marinade ingredients in a small bowl & whisk until combined. Pour the marinade over the tempeh and allow it to soak in the flavours, covered in the fridge, for 2-8 hours (the longer you leave it, the stronger the marinade will be).
Before you start to stirfry the veggies, heat a bit of coconut oil on the stove in a wok and cook the tempeh for 7-10 minutes until it’s browning up (you can chop the veggies while the tempeh is cooking).
1 tsp of coconut oil
1 tbsp of ginger, minced
2 carrots, peeled & sliced
1 medium zucchini, sliced
1 red pepper, chopped
1 cup fresh pineapple, chopped into bite-size pieces (throw the juice into the stirfry)
1/2 cup of peas
2 pieces baby bok choy, sliced
1/4 cup fresh cilantro (or 1/2 tsp dried coriander)
2 tbsp of coconut aminos (or soy sauce)
1 tbsp of rice vinegar
Heat the coconut oil in a wok on the stove and add the ginger & carrots and sautée for 5 minutes until the carrot becomes slightly tender. Add the zucchini & stirfry another few minutes. Add the remaining ingredients, including the marinated & cooked tempeh and cook until heated through. You can serve this on top of rice, or just add your favourite grain (we enjoyed some cooked quinoa stirred right in). Throw some cashew pieces on top and maybe a few chili flakes and polish your bowl off =)
